White Chocolate Blondies

+1 Cannellini Beans

These White Chocolate Bean Blondies prove that a vegie can be snuck into anything, even sweet treats! We’ve added cannellini beans to make the mixture go just a little bit further. Bake in advance and store them for later, but we can almost guarantee you’ll love them so much they’ll be devoured in a matter of minutes.

Ingredients

+1 1 CAN (400g) EDGELL CANNELLINI BEANS

  • ½ cup butter, melted
  • ¾ cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • ½ teaspoon baking powder
  • ½ cup white chocolate chips

Method

In a large bowl, mix the butter and sugar.

DRAIN AND PUREE THE EDGELL CANNELLINI BEANS AND ADD TO THE MIXTURE.

Add egg and vanilla and stir to combine thoroughly.

Stir in flour and baking powder until mixed.

Fold through almost all of the white chocolate chips, leaving a few to sprinkle over the top.

Line a 20cm x 20cm square pan (small lamington tray is also good) with baking paper, and spoon in the batter. Spread out until it fills the bottom, and smooth over the top.

Sprinkle reserved white chocolate chips over and bake 20-25 minutes, until a skewer inserted into the centre comes out clean. Cool in pan.

Tips

If the choc chips are starting to burn, cover loosely with foil.

Dust with icing sugar before serving.
