Spicy BBQ Potatoes

+1 Edgell Corn

Ahhh, potatoes. We’ll find an excuse to eat them at any time of year and we love to pull this recipe out in the warmer months. Throw these Spicy BBQ Potatoes with corn on the barbie alongside your favourite meat and in 5 minutes you’ll have the perfect summer side dish.

Ingredients

+1 1 CAN (310g) EDGELL CORN KERNELS

  • ¼ cup olive oil
  • 1 teaspoon chilli flakes
  • 1 garlic clove, crushed
  • ½ teaspoon smoked paprika
  • 822g can Edgell Tiny Taters, drained
  • Parsley, for serving
  • Sour cream, for serving

Method

In a medium bowl, combine oil, chilli flakes, garlic, paprika and a pinch of salt. Add Edgell Tiny Taters and coat well.

ADD DRAINED EDGELL CORN KERNELS.

Spoon onto a hot BBQ or frying pan turning frequently until heated through and golden brown.

Serve sprinkled with torn parsley leaves and sour cream for dipping.

Tips

Add half a cup of finely diced bacon to the Edgell Tiny Taters.

Healthy Tip: Use light sour cream rather than regular.
