Smoked Chicken Salad

+1 Edgell Corn

We’re always drawn to colourful food and this salad is exactly that. The added corn gives a pop of sweetness to the fresh flavours and tangy dressing. Smoked chicken keeps well, so having it on hand along with a few key ingredients means you can always whip up an easy meal!

Ingredients

+1 1 CAN (125g) EDGELL CORN KERNELS

  • 2 cups mixed lettuce leaves
  • 1 carrot, peeled into ribbons
  • 8 asparagus spears, trimmed
  • 4 mini Roma tomatoes
  • 1 smoked chicken breast, thinly sliced
  • ⅓ cup salad croutons
  • Freshly ground black pepper
  • -
  • Dressing:
  • 1 tablespoon Leggo’s Tomato Paste
  • 1 tablespoon olive oil
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon chopped fresh parsley

Method

Arrange mixed lettuce leaves, carrot ribbons, asparagus spears and tomatoes onto 2 serving dishes. Top with smoked chicken slices.

SPRINKLE DRAINED EDGELL CORN KERNELS OVER SALAD.

Combine dressing ingredients and pour over salad.  Sprinkle with freshly ground black pepper for serving.

Tips

Young or baby asparagus can be eaten raw otherwise pour boiling water over asparagus and leave for 1 minute before draining.

Smoked chicken breasts are available in the refrigerated section of the supermarket.

Healthy Tip: Substitute smoked chicken for regular cooked chicken.
