Quick Pea & Bacon Soup
If you’re looking for a quick soup fix to warm your belly, give this Pea & Bacon Soup a whirl. We’ve added some mash to the recipe to give this soup a creamy consistency. Make sure you’ve got some fresh, crusty bread on hand to help wipe the bowl clean.

+1 1 PACKET (100g) EDGELL INSTANT MASH
- 2 tsp oil or butter
- 2 spring onions, sliced, plus extra, for garnish
- 4 shortcut bacon rashers, chopped
- 420g can Edgell Garden Peas, undrained
- 2 cups chicken stock
- Crisp bacon strips, for garnish
- Crusty bread, for serving
Heat oil in a medium saucepan. Add spring onions bacon and sauté for 1 minute.
Stir in undrained Edgell Garden Peas and chicken stock. Bring to the boil stirring continuously. Reduce heat and simmer for 5 minutes. Puree until smooth.
STIR THROUGH ¼ CUP EDGELL INSTANT MASH.
Garnish with crisp bacon strips and serve with crusty bread.
