Mexican Fajita Wrap

+1 Mexi Beans

Get your dose of Mexican food with this fantastic vegetarian recipe! Seasoned fajita strips, with avo, sour cream and cheese all finished off with our delicious Mexi Beans. Ready in just 10 minutes, this is a perfect dinner to come home to.

Ingredients

+1 1 CAN (300g) EDGELL MEXI BEANS

  • 200g chilled Quorn Fajita Strips
  • 1 avocado, lightly mashed
  • 4 corn tortillas
  • 125g can Edgell Corn Kernels, drained
  • 1 tomato, diced
  • ½ cup grated tasty cheese
  • ⅓ cup light sour cream
  • Fresh coriander, for garnish

Method

Heat Quorn Fajitas strips following microwave directions.

SPOON EDGELL MEXI BEANS OVER WARMED TORTILLAS.

Top with corn, tomato, Quorn Strips, avocado and cheese. Dollop with a little sour cream, garnish with coriander and wrap tortillas around filling.

Tips

For milder wraps, substitute Edgell Mexi Beans with Edgell Red Kidney Beans.

Quorn strips can be found in the vegetarian section of your Coles supermarket chiller.

Healthy Tip: Use wholemeal corn tortilla wraps.
