Garlic Prawns & Chargrilled Mango

+1 Edgell Corn

Nothing says Australia quite like throwing prawns on the barbie! We’ve added our Aussie corn for an extra splash of colour and crunch that complements the garlic of the prawns and the sweetness of the mango. Cooked and on your plate in less than 15 minutes, this is a delicious summer starter.

Ingredients

+1 1 CAN (125g) EDGELL CORN KERNELS

  • 300g pack chilled John West Garlic Prawns
  • 2 mangoes
  • Lime wedges, for serving
  • Baby rocket leaves, for serving
  • 1 red chilli, thinly sliced, for garnish

Method

Thread John West Garlic Prawns onto skewers. Cut mango cheeks leaving skin on.

Place mango (cut side down) and prawn skewers on a chargrill plate and cook for 3-4 minutes, turning prawns half way.

ADD DRAINED EDGELL CORN KERNELS TO CHARGRILL.

Place mango on serving plates, top with prawn skewers and serve with lime wedges and rocket leaves. Garnish with chilli.

Tips

Alternatively, cube the mango and thread on skewers with the prawns before cooking.

Healthy Tip: To add even more vegetables, use a 310g can of Edgell Corn Kernels.
