Black Eye Bean Dip
It's hard to believe there's this much deliciousness in a recipe that is so simple! The black eye beans give this dip a hummus-like consistency popping with hints of lemon and the spice of cayenne pepper. This is our top choice for an afternoon snack in the warmer weather!

+1 1 CAN (400g) EDGELL BLACK EYE BEANS
- 1 clove garlic, crushed
- ¼ teaspoon cayenne pepper
- Finely grated zest and juice of 1 lemon
- Crackers and vegetable sticks, for serving
- Olive oil for serving
PLACE DRAINED EDGELL BLACK EYE BEANS, GARLIC, CAYENNE PEPPER, LEMON ZEST AND JUICE IN A FOOD PROCESSOR.
Season to taste. Blend until a smooth consistency. Adjust consistency by adding a little water if necessary.
Drizzle with a little olive oil with crackers and vegetables sticks.
The size or juiciness of lemon will determine the amount of water required.
