Bacon, Corn & Avocado Salad with Sour Cream Dressing

It’s easy to make friends with salad, especially when there’s bacon involved! There's so many tasty flavours going on, including our delicious, creamy new black beans. Trust us, this Bacon, Corn & Avocado Salad is one to add to your repertoire.

  • 300g bacon/ham diced
  • 1 tablespoon olive oil
  • 4 spring onions
  • 1 red capsicum
  • 1 yellow capsicum
  • 1 green capsicum
  • ½ medium red onion
  • 420g can Edgell Corn Kernels, drained
  • 1 avocado
  • Juice of ½ lime
  • Juice of ½ lemon
  • -
  • Dressing:
  • 200g whole egg mayonnaise
  • 100g sour cream
  • Juice of ½ lime
  • Juice of ½ lemon


Dice bacon/ham into ½ cm cubes. Place in a pan on medium heat with olive oil and pan fry until crunchy and delicious. Note: this could take a while so be patient. Also be careful of spitting fat.

Once done, remove and place on paper towel to drain the oil. Set aside.

Finely chop spring onions, capsicums and red onion and mix together in a bowl with drained Edgell Corn Kernels.


Set aside.

In a bowl, whisk together mayo, sour cream, juice of ½ lime and ½ lemon. Set aside.

Dice the avocado and place in a separate bowl, add the remaining juices of lime and lemon, make sure all pieces are coated. Set aside.

Bring everything together by layering. First some corn mix, then some dressing, then some bacon, some avocado and some more dressing. Repeat until you have a mound of delicious salad. Top with lots of crunchy bacon bits. This is how the salad should be presented to guests. It should only be tossed carefully the minute prior to eating.


Alternatively keep all ingredients separate and layer in individual serving jars.
